The Perfect Nut Milk

       

The perfect nutrient dense addition to tonicsteasmatcha and smoothies, you can always find a bottle of homemade nut milk in our fridge.

A good nut milk is an essential part of any recipe rolodex. Feel free to play with your water ratio, as less water will yield a thicker more cream-like milk. Combining different types of nuts is great too, but always make sure they’re activated in order to enhance their digestibility.

THE PERFECT NUT MILK

Makes 4 servings

 

1 cup organic raw nuts (almonds, cashews, brazil nuts and hazelnuts all work well)

4 cups filtered water, plus more for soaking

Splash of vanilla extract

1 date, pitted

1 tablespoon The Coconut Butter (optional, but delicious)

 

Place nuts in large bowl and cover with filtered water. Let stand overnight. In the morning, rinse and drain and add to a powerful blender (we love a Vitamix). Add water, vanilla, salt and date and coconut butter if using. Blend on high speed for 30 seconds to a minute. Strain through nut bag and store in fridge. This will last a few days, but will be gone before you know it.
